With hard and crunchy texture, this Torta de Alicante is deeply nutty but not too sweet. It is made following the traditional recipe, 65% whole peeled toasted marcona almonds, honey and eggs. The clear diluted egg whites are mixed with the almonds. Then, the honey is heated, and the almond base is added to the rest of the mixture, poured into round shape containers before a thin edible rice paper coat is added.
