This hot smoked paprika comes from fresh handpicked long red peppers naturally grown in the ‘La Vera’, a traditional pepper growing region in Extremadura,southwest of Spain. The traditional method to preserve the peppers is still used nowadays, the process can take up to 15 days and consist on dehydrating the peppers from the heat of oak-wood fire, which infuses the peppers with wood pipe notes. Then the dry peppers are ground using traditional stone mills to keep temperatures low and help retain natural flavours, resulting on an intensely smoky flavour with a very gentle hint of heat. Used for stews, romesco sauces, home-cured chorizo sausages and marinades. Pimentón de La Vera has D.O.P. status (Protected Denomination of Origin).
