Our Ibérico Lomo comes from the loin of black Iberian pigs, fed on a diet of high-quality grain. It is dry-cured with salt, oregano and smoked paprika over a 120 days period which lends it a unique, smoky flavour. The result is a marbled interior, thanks to its fat and a red exterior colour provided by the use of pimenton (sweet spiced paprika).
