This is a very healthy and easy to prepare dish. As well as boasting a salty flavour, anchovies provide an excellent source of nutrition for your body.
- Separate the leaves, wash, cut and dry them. Then halve the cherry tomatoes and mix with the green salad in a bowl.
- Cut the cheese into thick slices and add to the salad.
- Add the anchovies and season the salad with the olive oil and balsamic vinegar.
- Additionally you can add some salt and pepper but be careful with the salt because the anchovies are quite salty already.
Ingredients & Quantities:
250 grs of green salad (preferable lamb´s lettuce)
100 gr of cherry tomatoes
150gr of low fat cheese
1 tin flat anchovy fillets, drained
2 spoons of extra-virgin olive oil
1 spoon of balsamic vinegar
Salt and pepper (only a little salt since anchovies are quite salty)
1 cup of black or green olives (optional)
