Slowly matured for 6 months in a natural dryer, this cheese is made from 100% sheep milk and its maturity gives it a mild taste, not over-powering, with a nutty piquancy and a smooth, semi-hard texture. It is not a "Manchego" cheese and does not have DOP status, but it has similar characteristics as comes from sheep`s milk.
