Our Manchego cheese is made with Manchego sheep milk from Manchega breed free-range sheep. It is matured for a minimum period of 6 months, when is about halfway to being completely solid. Its taste is mild, not over-powering, with a nutty piquancy and a smooth, creamy texture in the mouth. It works very well for melting, salads or just own its own. It is officially a "Manchego" cheese and each wedge has its unique ‘Queso Manchego DOP’ identifier.
